Keeping in style with their island-luxe vibe, the flavours borrow heavily from Caribbean nations, with new additions like the Jamaican-spiced king prawns and the Creole-spiced spring lamb rump to the menu.

Head Chef Keith Windsors says, “The new menu is sophisticated and contemporary in style, but still features the playfulness and exotic tastes derived from the Caribbean. Over the past six months we have been receiving feedback from our diners, around what they would like to see more of, and we have taken these comments into consideration when producing the latest menu.

“Diners can expect to see an abundance of fresh and locally sourced seafood, as well as pork, duck and our speciality jerk-spiced chicken. We have a lot of fresh fruit and seasonal vegetables included in most entrees, salads and main courses, which are not only aesthetically pleasing in colour but provide fresh summer flavours.”

On ‘The Grill’, you’ll find specialty steaks; the Barbados comes with chili, lime and coriander; the St Lucia, a fun mix of rum, cumin and paprika, and the New Orleans, which comes with roasted Cajun spice. Still not feeling the island vibe? Top your steak with a few seared scallops and tempura prawns, and you’ll be reaching for the maracas in no time.

If you’re in the mood to sit out and enjoy the peninsula sea breeze, indulge in a few cocktails (my pick is the Chambord Summer Punch) and some exotic island flavours, all a stone’s throw from Brisbane, then take a trip out to Redcliffe and check out Caribbee Restaurant.
