The stars aligned for me on Wednesday night with the Champagne Louis Roederer Dinner at the InterContinental Hotel in Sanctuary Cove.

Champagne Louis Roederer Dinner at the InterContinental Hotel in Sanctuary Cove!
Six decadent courses were matched with different vintages of Louis Roederer champagne – an effort achieved by Sous Chef Parashuram Pathak and Sommelier David Stevens-Castro. The 2008 Rosé was served alongside the first course of quail prosciutto, golden plum and brioche. A refreshing rambutan ice with citrus and mirco basil gave refreshment between the seafood (Moreton Bay bugs, mud crab) and the main course of wood-fired roasted veal Chateaubriand. Local cheese and an intricate dessert playing on summer fruits ended the evening, as did the 2007 Roederer Blanc de Blancs.
David was on hand to describe and introduce each champagne, and Parashuram the food (in his delightful Nepalese-English). Also in attendance was wine writer Tyson Stelzer, on the final evening of his book launch tour for ‘The Champagne Guide 2014-2015’. Tyson kept us entertained between courses with histories, first-hand stories and some important insights into the world of champagne.
