After making their Brisbane debut last weekend, Melbourne’s Butterbing cookie sandwiches will be popping back up in West End this weekend.

Possibly Melbourne’s best cookie sandwich, a Butterbing is two dark chocolate brownie cookies joined with a centre of delicious buttercream.

The brainchild of passionate baker and chocolate lover Simone Clark, Butterbing cookie sandwiches can be found at around 100 Melbourne cafes, but you can’t get them in Brisbane — until now.

The deadset heroes at the Morning After cafe in West End brought Butterbings to Brisbane for the first time last weekend, slinging salted caramel, peanut butter, vanilla and Nutella flavours.

They even gave away a Butterboom — a giant, 1.5 kilogram cookie sandwich that’s as big as a dinner plate — to one lucky diner.

But if you missed out on the Butterbing experience, there’s no need for tears — the cookie sandwiches are back at Morning After this weekend, and they’ve doubled up on the order.

Oh, and they’re giving away another Butterboom, so you better leave room.

Here’s hoping Butterbing finds a permanent home in Brisbane soon…

The Butterbing pop-up will be held at Morning After (Vulture Street & Cambridge Street, West End) this Friday 12 May to Sunday 14 May from 7am to 4pm each day.
